Everyone loves to eat summer berries
Delicious summer berry recipes for juicy desserts, treats, and drinks
If there’s one thing that you can count on each summer, it’s berries. Strawberries, Gooseberries, Raspberries, Loganberries…the list goes on. Most of them grow on bushes and plants that are ‘Perennial’, meaning they grow back year after years. Once you plant them, you can be sure of a juicy and sweet harvest that can be used in all sorts of summer desserts and drinks. Here are some of my favourite ways to enjoy the harvest!
Strawberry and Rhubarb Pie
In my humble opinion there is no other berry pie better than this one.
Pavlova with cream and Fresh Berries
Light as a feather and much easier to make than you would think. Pavlovas are a fancy name for meringue and they’re made with mainly egg whites and sugar. If you’ve not had one before, they’re sweet and chewy and absolutely divine.
Blueberry & Lavender Jam
Lavender recipes are all the rage these days. Ice cream, cakes, cookies, and even homemade preserves. The blueberries in this recipe give sweet fruitiness and the lavender lifts it up with a floral and nutty undertone.
Strawberries & Cream
This is my not so classic twist on strawberries and cream. It’s so simple that I don’t even need to direct you to another recipe page. Just layer freshly whipped cream, fresh strawberries (and pineberries if you grow them), and your choice of compote, fruity syrup, or jam. I made a simple rhubarb compote for this dish — four cups of chopped rhubarb simmered with 3/4 a cup sugar until soft and delicious.

How to make wine using fruit and berries
Sweet strawberry wine, Raspberry wine, and many more ideas. If you have a lot of berries in the garden, homemade wine is a GREAT way to use them up. Most of the time making wine will cost you less than $1 a bottle.
Ripening late in the summer, elderberries are a natural anti-flu medicine. They’re also delicious when make into jams and elderberry syrup. Have it on its own as a medicine or spoon it over pancakes and ice cream for a wild foraged treat.
