Use grated zucchini and an overripe banana to make these delicious homemade sweet zucchini waffles. They’re golden on the outside, fluffy on the inside, and sooooo good! They are also a fun way to use up your zucchini and only take just over half an hour to make.

This zucchini waffle recipe is pretty easy to make and uses inexpensive ingredients that you may already have in your kitchen cupboard. It’s also a fab way to use an overripe banana—even one with a black peel! You begin by grating the zucchini and squeezing out the excess water. Next, you add it to the wet ingredients, stir in the dry, and let the mixture rest for five minutes. Pour the batter into a waffle maker and cook it until it’s golden. In all, it takes just over half an hour!
As you make the waffles, keep them warm in the oven, then serve them with your choice of toppings. We’ve been having them with just plain maple syrup, and they are DELICIOUS. We’ve also had them with generous pats of real butter, toasted walnuts, whipped cream, banana slices, and berries. If you have fussy kids, they will have no idea these waffles have veggies in them—especially if you use a yellow summer zucchini.
Ways to Use a Zucchini Glut
Every year I vow to grow only one, maybe two, zucchini plants, and then I usually end up with about four. Every gardener knows to sow spare seeds as a precaution, but when they all come up triumphantly, I can’t bear to send the extras to an early end in the compost pile. Fresh zucchini is full of nutrients, fiber, and water, and because the flavor is mild, it’s one of those veggies that’s pretty easy to hide in food. For this recipe, we squeeze out as much juice as possible, but the grated zucchini still adds the perfect amount of moisture. Using it this way is a delicious way to add tenderness and moisture to waffles, without making them soggy.

One last thing… Savory zucchini waffles are more well-known than sweet, probably because of the stereotype that you’re cooking what’s seen as a “vegetable.” Honestly, though—you cannot taste zucchini at all in these. Zucchini Waffles Recipe
Equipment
- 1 box grater (or food processor)
- 1 whisk
- 1 waffle maker (or waffle iron)
Ingredients
- 1 cup zucchini (grated)
- 1 overripe banana (100 g; the softer the better)
- 4 TBSP butter (melted, 56 g; or a neutral oil)
- 2 eggs
- 1/4 cup milk (60 ml; or oat milk)
- 1 tsp vanilla extract
- 1 TBSP brown sugar (packed; 15 g)
- 1 cup all purpose flour (plain flour; 125 g)
- 1.5 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp cinnamon
Instructions
Make the waffle batter
- To make this recipe, you begin with 1 cup of grated zucchini. That's around 1 small zucchini, but you can grate what you need from a larger one.
- Squeeze the excess water out of the grated zucchini*—you can use your hand and manually squeeze it over a sieve or colander. You can also put it in cheesecloth and wring the moisture out that way.
- Mash the banana in a mixing bowl, then pour the melted butter (or oil) over it and whisk it together.
- Whisk in the eggs, milk, sugar, and vanilla, then stir in the grated zucchini.
- Add the remaining dry ingredients, including flour, salt, baking powder, and cinnamon. Fold them until just combined, but don't over-stir—the batter should now be thick but spoonable. Let it rest for about five minutes.
Cook the waffles
- Preheat the waffle maker and lightly grease it with more melted butter or non-stick spray.
- When it's hot, add just enough batter to fill the bottom waffle cavities about 2/3 to 3/4 full. Close the waffle maker and cook until the waffles are golden brown and the steam coming from the waffle maker has noticeably reduced.
- When done, transfer the zucchini waffles to a wire rack instead of stacking them. This will help stop them from becoming soggy. If you're making a lot of waffles, keep them on a wire rack in a warm oven (about 80–90°C / 175–195°F).
- Serve with maple syrup, banana slices, and other toppings. Whipped cream, roasted walnut pieces, and tiny dark chocolate chips are lush! Enjoy
